【便當日記】#28糖煮橘子與橘汁蜜雞翅親子丼Bento #28 Cooked Orange Marmalade, Orange Chicken and Egg Donburi(Rice)
上回做了橘汁蜜雞翅,小雨非常喜歡,要我再做些。
利用這週糖煮橘子的湯汁稍微變化一下,就可以製作橘汁蜜雞翅,接著再變化一下,就是橘汁蜜雞翅的親子丼。
【糖煮橘子】
(參考自飛田和緒《常備菜2》P114)
橘子6個
水1.5杯
糖 3/4杯
1.將橘子剝去外皮和薄膜。
2.所有材料放入鍋中煮沸後,轉小火煮15分鐘,放涼後再移入冰箱冷藏。
▽下圖左邊第二道即是糖煮橘子。
【橘汁蜜雞翅親子丼】
醃料:
糖煮橘子的湯汁65ml
醬油50ml
蜂蜜10ml
薑2片
去骨雞翅3-6隻
1.前一晚將肉剁斷纖維,置於醃料中,放入冰箱。
2.將雞肉放入鍋中煎熟後,加入2顆打散的蛋煎至八分熟,最後倒入剩餘醃肉湯汁,蓋上鍋蓋煎至全熟。
3.放涼後,仔細瀝掉油脂和湯汁,再移入便當盒中。
註:因為是帶便當用的食物,一定要將蛋煎至全熟,不然容易滋生細菌。
